Skillet Chicken with Tomatoes


1 lb skinless, boneless chicken breasts cut into small pieces
1 small onion, thinly sliced
1 carrot, sliced
1 celery stalk, sliced
2 tsp chopped garlic
1 tsp dried oregano
½ tsp dried parsley
¼ tsp salt
1 can of stewed tomatoes, not drained (16 oz.)
1 ½ cups chicken broth, fat removed
2 cups sliced potatoes


Spray a skillet with non-stick cooking spray. Sauté chicken until browned. Add remaining ingredients to skillet and simmer over medium heat until potatoes are tender.

Makes approximately four 1 ½ cup servings.
