The Texan Bowl

Texan Bowl Ingredients:

  • 3-4 boneless, skinless chicken breasts
  • 1 cup cooked brown rice
  • 1 medium can black beans, drained
  • 1 medium can corn, drained
  • 1 can spicy stewed tomatoes
  • 1 cup shredded or grated fat-free cheese
  • 1 medium sized avocado or guacamole

Instructions: Boil chicken in water until cooked throughout, about 20 minutes, then cut into cubes or small pieces. Place rice, beans, corn and tomatoes in a large oven safe dish or bowl, stir until mixed, and top with shredded cheese. Bake for 10 minutes or until cheese melts. Top with sliced avocado or a scoop of guacamole.
