Tofu Sandwiches


1 five-ounce slice of tofu

2 slices whole wheat or rye bread, lightly toasted

Lettuce (optional)

1 slice of soy cheese (optional)

Sun dried tomato paste


Grill the tofu on a grill, such as the George Foreman, for approximately 5 minutes. Generously cover bread with the sun dried tomato paste, then add the tofu between the bread. If desired, include the soy cheese and lettuce.
