White Bean Burgers w/ Honey Mustard Mayo


¼ cup reduced fat mayonnaise

1-tablespoon honey mustard


1 can (15.5 ounces) of cannellini beans, rinsed and drained

1/3 cup dry breadcrumbs

1 celery stalk, minced, about 1/3 cup

¼ cup finely chopped Italian parsley

¼ teaspoon dried sage

¼ teaspoon kosher salt

¼ teaspoon coarsely ground black pepper

1 medium tomato, thinly sliced

1-cup alfalfa sprouts

4- English muffins, toasted.


In a small bowl, combine mayonnaise and mustard; stir until smooth. Cover and chill until ready to serve. Meanwhile, coat grill or broiler rack with cooking spray. Heat grill to medium high for indirect heat, or heat broiler. In a large bowl, mash beans until most of them are crushed. Stir in the breadcrumbs, celery, parsley, sage, salt and pepper until well combined. Gently shape into 4-inch patties. Grill or broil patties for 10 minutes, turning only once, until lightly browned. Serve on muffins with tomato, sprouts and honey-mustard mayonnaise. Makes 4 servings.
